Since 2012, the core source for the Fableist Cab has been the Hinterland vineyard in north Paso along the Salinas river bottom. The cab comes straight out of the vineyard on the sand and as the elevation rises we get more clay mixed into the soil. The cab is on the sandier half of the vineyard to add finesse to the powerful Cab. Typically, the Merlot from Hinterland will almost taste the same from year to year as the specific soil types bring things into harmony. It spends 18 months in American Oak barrels. By being the second fill it keeps the oak character just subdued enough for perfect balance. Everything you love about Cabernet, brought seamlessly together. With notes of graphite, black currants and vanilla extract, the wine opens up and envelops you with a berry pie aroma. The sweetness is complimented by complex, licorice-infused dark chocolate. Reflect on the good ol' days with this perfect homage to Paso Cab.
